Herb-Roasted Salmon

I don’t know who to attribute this fantastic recipe for salmon, as it was given to me by a dinner host who served up this delicious fish for dinner, and it looked like it was copied from a magazine or cookbook. I have made this many times since receiving it, and have also changed it up to use different flavoring, like a teriyaki sauce, instead of the herbs. But, I still treated the base in the same way, using the marinade and wine. This recipe works wonders to keep the fish moist and flavorful. Best of all, it is simple and elegant. Hope you enjoy it!

Serves 6.
1 large (2-2/12 lb.) salmon fillet, bones and skin removed
Kosher salt and freshly ground black pepper
1/4 C good olive oil
2 TBS freshly squeezed lemon juice
5 scallions, white and green parts, minced
1/2 C minced fresh dill
1/2 C minced fresh parsley
1/4 C dry white wine
Lemon wedges, for serving

1-Place the salmon fillet in a nonreactive roasting dish and season it generously with salt and pepper. Whisk together the olive oil and lemon juice and drizzle the mixture evenly over the salmon. Let it stand at room temperature to marinate for 15 minutes.
2-Preheat the oven to 425 degrees F.
3-In a bowl, stir together the scallions, dill, and parsley. Scatter the herb mixture over the salmon fillet, turning it so that both sides become generously coated with the green herbs. Pour the wine over and around the fish fillet.
4-Roast the salmon for 10-12 minutes, until almost cooked in the center at the thickest part. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes. Cut the salmon across into service pieces and serve hot with lemon wedges.

I just watched blogger Neil Pasricha at his inspiring video from TEDx Toronto filmed in September 2010. What is wonderful is how he shows us how the tiniest everyday things in life are the most important aspects of leading an Awesome life that is rich and satisfying through his simple and meaningful 3 secrets. The Best PowerPoint Presentation of 2010

I share this for a couple of reasons from Carmine Gallo’s blog. First, I am into PowerPoint presentations that visually tell the story in a captivating way. I have been working on this over the past year and while I have improved in my visual presentations, I am always eager to learn from others. Second, and probably more importantly, is the story that is told in this presentation about smoking. Unfortunately, I smoked when I was much younger, and as a former smoker–I’m the worst when it comes to smelling second-hand smoke and seeing cigarette butts on the ground or being flung out a window. However, this story is compelling and gives other perspectives to consider.

The Sampler Box

Well, I nearly forgot to post what the finished product looked like. I added a nice gold ribbon and candy cane to close the package, and added a sticker that indicated these were homemade goodies! They looked like store bought items by the time we were done, so I thought I should clarify! From the comments we got, the sampler was a hit!

I’ll swap out a couple of items next year just to keep things interesting!

I am going to take this to as my guide for 2011. While I am not the type to sit idly by and expect good things to happen, I know there are areas in my life that require more bold action on my part. Oh, and I should clarify that it should be focused action. That part seems to be my general challenge and will continue to work on that. So, in 2011, I will “boldy go” with focused action toward my goals.

Baking for Gifts

I used to bake a favorite type of cookie and give those out to neighbors for Christmas. Last year, I decided to venture into a different realm and create a sampler of cookies and candies as a nice boxed gift for my neighbors and friends.

What has been so wonderful is the time creating memories with my daughter, who is thirteen years old. Whether it creates a tradition, who knows, but it is that time in the kitchen together that we find so enjoyable.

Here is the selection we have chosen for this year’s sampler:

Not only is it fun to make, my friends and neighbors know that I treasure them when they get something that is homemade. I hope they enjoy the treats!
